Fried rice is one of my go-to dishes I make for lunch. It is a quick one-pot meal that my mother and I enjoy often. Today, I decided to make “Shrimp Garlic Fried Rice.” I simply used a few shrimps I had in the freezer and vegetables I already had in the refrigerator. You can add any variety of vegetables you already have or even use chopped frozen vegetables, which I often do. I always make sure I cook enough so there are leftovers for my husband so he doesn’t miss out.
Ingredients:
- 2 eggs
- 3 tbsp. olive oil
- 1 small carrot, finely diced
- 1/4 zucchini, finely diced
- 1/2 small red onion (or yellow onion), finely diced
- 1/3 green bell pepper, finely diced
- 7-10 garlic cloves, thinly sliced
- 1 scallion, finely chopped
- 5-7 shrimps (frozen)
- 3 bowls of cooked brown (or white) rice
- 1 tbsp. oyster sauce or soy sauce
- 1 tbsp. mirin
- 1/2 tbsp. sesame oil
- 1/2 tbsp. toasted sesame seeds
- Salt and pepper, to taste
- While the shrimp is defrosting, finely chop all the vegetables and thinly slice the garlic.
- Make scrambled eggs and place it aside.
- Sauté the garlic in olive oil and when the garlic aroma is released, sauté the rest of the vegetables on high-heat.
- Add the shrimp and stir quickly.
- When the shrimp changes color, add the rice and mix.
- After sautéing the rice for a few minutes add oyster sauce (or soy sauce), mirin, sesame oil. Add salt and pepper to taste.
- Plate and garnish with toasted sesame seeds.
