Shrimp Garlic Fried Rice (새우마늘볶음밥)

IMG_1896

Fried rice is one of my go-to dishes I make for lunch. It is a quick one-pot meal that my mother and I enjoy often. Today, I decided to make “Shrimp Garlic Fried Rice.” I simply used a few shrimps I had in the freezer and vegetables I already had in the refrigerator. You can add any variety of vegetables you already have or even use chopped frozen vegetables, which I often do. I always make sure I cook enough so there are leftovers for my husband so he doesn’t miss out.

Ingredients:

  • 3 tbsp. olive oil
  • 1 small carrot, finely diced
  • 1/4 zucchini, finely diced
  • 1/2 small red onion (or yellow onion), finely diced
  • 1/3 green bell pepper, finely diced
  • 7-10 garlic cloves, thinly sliced
  • 1 scallion, finely chopped
  • 5-7 shrimps (frozen)
  • 3 bowls of cooked brown (or white) rice
  • 1 tbsp. oyster sauce or soy sauce

  1. While the shrimp is defrosting, finely chop all the vegetables and thinly slice the garlic.
